Easy Avocado Toast Breakfast

There are many heart-healthy benefits of avocados. Avocados are high in unsaturated fats that will keep you feeling full. Try this recipe from the Abiomed cafe!

Prep Time 5 minutes, Cook Time 5 minutes, Total Time 10 minutes


  • Toaster


  • 1 slice of bread (use thick sliced, sturdy whole grain or sourdough bread)
  • ½ ripe avocado
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper plus a pinch more for topping
  • ½ teaspoon extra virgin olive oil
  • ½ teaspoon fresh squeezed lemon juice

Optional Toppings

  • Sliced tomatoes, a fried egg, cooked bacon, smoked salmon, sliced chicken, baby spinach, fresh cilantro


  1. Toast bread until golden brown
  2. Slice the avocado in half lengthwise and remove the pit from the avocado. Use a large spoon to scoop the avocado out of the skin. Place the avocado in a small bowl and mash with the back of a fork. Gently stir in salt, pepper and lemon juice
  3. Spread the avocado over the slice of bread
  4. Drizzle with olive oil and add a pinch of salt and pepper
  5. Add your favorite toppings
